True to its "Wild" name, the grapes are hand-picked at optimal ripeness and fermented spontaneously using only indigenous wild yeasts from the vineyard. The wine is bottled completely unfiltered and unfined, with a minuscule amount of sulfites (less than 10mg/l) added only at bottling to preserve its lively character.
