This is not a cooking salt but a finishing salt. Its crystals retain moisture and have an airy, flaky texture, allowing them to melt instantly on the tongue. However, if added to a boiling pot, they will dissolve, losing their magical charm.
The Story
1500 Years of Tradition
In the historic royal city of Nin, salt is not "produced" by machines, but "created" by the natural environment. Solana Nin (Nin Saltworks) has been producing salt for over 1500 years in the exact same protected ecosystem. During the Roman Empire, this salt was so valuable that it was traded as currency and paid as wages to Roman soldiers (the origin of the word "salary"). To this day, a pristine, biodynamic environment is maintained where the sea, sun, and wind do all the work.
What is Cvjet Soli (Flower of Salt)? (A Fleeting Harvest)
Cvjet Soli is the pinnacle of sea salt, and its harvest is a "daily race against time" with nature.
Daily Harvest: The brittle, petal-like crystals form only on the "surface" of saltwater on hot, sunny days. Because they are so delicate, they must be harvested daily at specific times in the early morning or evening when the water's surface is completely calm and windless.
Precious Timing: If a strong wind suddenly blows, or if the crystals remain on the surface for too long, the surface tension breaks, and the delicate "flower" sinks to the bottom of the salt pan, becoming ordinary coarse salt.
100% Hand-Harvested: This precise timing makes mechanical harvesting impossible. Artisans gently skim the surface by hand using a traditional fine-mesh wooden tool called a "mussula."
Unrefined Purity: It is completely unwashed, unbleached, and contains no anti-caking agents or chemical additives. What you taste is the pure Adriatic Sea itself.

A bounty nurtured by the sea and the "Bura" wind
Like fine natural wines (low-intervention wines), Cvjet Soli purely expresses its terroir. It can only be produced under very specific microclimatic conditions. As the clear Adriatic seawater slowly evaporates in shallow salt pans, the dry local "Bura" wind, blowing down from the Velebit mountains, accelerates surface evaporation, setting the stage for these magnificent crystals to bloom.
