Tasting Notes

■ Appearance: Deep, brilliant amber with vivid coppery highlights.

■ Aroma: An intense and captivating bouquet of dried apricots, wild honey, roasted walnuts, and a distinctive earthy spice derived from traditional whole-bunch fermentation.

■ Palate: Medium-bodied and powerful with a remarkably firm structure. The bright acidity of Chitistvala and Rkatsiteli cuts through the rich, tropical notes of Kisi. The inclusion of stems during 7 months of Qvevri aging imparts a strong, tea-like tannic grip, leading to a long, deep, and savory finish.

The Story

A trio of indigenous Georgian varieties and ancestral Qvevri methods
This wine showcases a superb trio of indigenous Georgian grape varieties. Chitistvala, meaning "bird's eye," offers freshness and a rare heritage; Kisi contributes rich, aromatic tropical fruit notes; and Rkatsiteli provides a robust backbone and refreshing acidity.

The grapes are hand-harvested in early September and fermented with wild yeasts. Following ancient methods, the wine undergoes spontaneous malolactic fermentation and is aged for 7 months in buried Qvevri with full skin and stem contact. It is then naturally clarified by gravity and bottled completely unfiltered.

Vachnadziani Valley, Sharoant Khevi (lowlands and highlands) Terroir
This blend masterfully captures the diverse microclimates around Sharoant Khevi. Chitistvala and Kisi vines thrive in the clay and silt-rich lowlands at 400 meters above sea level, while Rkatsiteli flourishes in rocky, silty soils at a slightly higher elevation of 450 meters. Organically cultivated, these low-yielding vines (just 4-6 tons per hectare) produce grapes of immense concentration.
