A masterpiece of traditional winemaking, this astonishing Brut Nature Blanc de Noirs is crafted entirely from 100% Cabernet Sauvignon grapes. Radacini Wines, established in 1998, is the pride of Moldova, a historical birthplace of European wine. This dosage-zero "Metier," a collaboration between their ambitious local winemaking team and veteran Italian winemaker Umberto Menini (with 50 years of experience), embodies the pinnacle of their craftsmanship.
Tasting Notes
■ Appearance: Brilliant straw yellow with delicate green edges and golden reflections. An astonishingly fine and persistent mousse.
■ Aroma: An elegant and complex bouquet intertwining refreshing notes of apple, pear, and yellow peach. Enhanced by subtle floral nuances and rich, savory toasted brioche.
■ Palate: Smooth and luxurious on the palate, bursting with deep flavors. A captivating and complete Brut Nature taste, where rich fruit, profound delicacy, and full-bodied richness achieve perfect balance.
Crafting a white sparkling wine from 100% Cabernet Sauvignon, with an average vine age of 15 years, demands extremely delicate handling. This approach results in a wine that retains refreshing elegance while possessing remarkable depth of structure and power. Grapes are hand-harvested in late August with strictly controlled yields. Utilizing the traditional method (secondary fermentation in the bottle), only first-press juice is fermented at 13-15℃ with selected yeasts. Malolactic fermentation is avoided to preserve sharp, lively acidity. The wine then undergoes a minimum of 18 months of sur lie aging in the bottle at 15℃, developing distinctive complex biscuit-like flavors.

Stefan Voda Region, Southeastern Moldova
Located in the southeastern part of Moldova, this region is characterized by a warm continental climate. The 17-hectare vineyard is planted on slightly loamy, carbonate-rich black soil (Chernozem). This unique soil composition imparts a distinct mineral backbone and remarkable concentration to the grapes.
