8,000 years of tradition in a bottle. The rare Kisi grape from Kakheti reveals wild elegance and a deep amber soul.
Akhmeta Wine House, nestled in the naturally abundant Akhmeta micro-zone of Georgia's Kakheti region, is a winery dedicated to crafting natural wines. Prioritizing biodiversity and ancient qvevri winemaking methods, they produce uncompromising, small-batch wines that purely reflect the raw beauty and rich history of their terroir.
Tasting Notes
■ Appearance: An impressive amber, golden-hued, with a beautiful natural haze.
■ Aroma: An enchanting bouquet of dried apricot, spring white flowers, and Darjeeling tea, intermingled with nuances of sweet baking spices and almond.
■ Palate: A beautiful structure with firm, dry tannins and layers of deep umami. Soft stone fruit flavors harmonize with crisp acidity, leading to a complex, mineral-driven finish reminiscent of brandy.
To fully bring out its complex umami and tannins, we recommend serving it slightly chilled at 10℃ to 12℃.
The Story
The Art of Rare Kisi and Qvevri Winemaking
Kisi is a rare white grape variety indigenous to the Kakheti region. Historically on the brink of extinction, its ability to produce highly structured and complex amber wines through skin maceration, coupled with its expressive floral aromas, has now earned it high praise from natural wine enthusiasts.
The grapes are hand-harvested and meticulously hand-selected. Fermentation exclusively uses wild yeasts in traditional Georgian clay qvevri, buried deep underground. After extended maceration with skins, seeds, and stems (chacha) for up to six months, the wine is bottled unfiltered. Sulfite addition is minimized (less than 10 mg/L).
Food Pairing
With its structured tannins, crisp acidity, and profound umami, this amber wine is surprisingly versatile and pairs well with flavorful, textured dishes.
- ■ Herb-grilled Chicken – The wine's structured tannins and dry finish beautifully cut through the richness and savoriness of roasted chicken.
- ■ Sushi and Sashimi (soy sauce-based) – The wine's distinct umami and Darjeeling tea notes perfectly complement the deep umami of soy sauce and fresh seafood.
- ■ Aged Goat Cheese and Walnuts – The wine's nuances of dried apricot and almond resonate with the nutty, earthy flavors of the cheese, creating a luxurious textural pairing.
Serving Temperature: 10℃〜12℃ (Enjoy at this temperature to fully appreciate its richness)
Vineyard & Terroir
Akhmeta Micro-zone (Kakheti Region)
Located at an altitude of 500-550 meters, this rare area where three rivers (Ilt’o, Alazani, and Orvilis) converge boasts a unique climate of mild winters and summers. The carbonate limestone and volcanic tuff soils impart unmistakable mineral tension and vibrant acidity to the grapes.
"This Kisi overwhelmed me with its wild energy and amazing grip! The tannins are serious, and the layers of dried apricot and Darjeeling tea make this an absolute 'umami bomb.' If you want to experience the true, unfiltered soul of Georgian natural winemaking, this bottle is what your table needs."
