The Story
Capricious rare varieties and new-generation talent
Aladasturi is a rare and historically significant grape variety from western Georgia, characterized by its late ripening, high acidity, and vibrant red fruit character. It is known to be very challenging to manage in the cellar, making the creation of a balanced and excellent Aladasturi a true test of a winemaker's skill.
The organically grown grapes are hand-picked and fermented with wild yeasts in traditional subterranean Qvevri. The wine is left to naturally clarify in clay vessels and is bottled unfined, unfiltered, and without added sulfites. While drawing on the extensive knowledge inherited from her father, Archil, Mariam creates wines with a brighter, fresher edge compared to the traditional, heavier Imereti style, and has quickly established her own solid reputation.
Food Pairing
Recommended perfect matches for this wine:
- ■ Yakitori: The wine's vibrant red fruit cuts through the savory and smoky flavors of the sauce, perfectly refreshing the palate with each bite.
- ■ Wild Mushroom Risotto: Earthy, umami-rich mushrooms highlight the delicate floral and herbal notes hidden in the Aladasturi.
- ■ Aged Hard Cheese and Charcuterie: The crisp acidity and gentle tannins provide a perfect counterpoint to the rich fat and saltiness of rustic meats and cheeses.
Serving Temperature: 12℃〜14℃ (Enjoy at this temperature range to bring out its full richness.)
Vineyard & Terroir
Terroir of Simoneti Village, Imereti Region
Mariam's 1-hectare vineyard, located at an altitude of 250 meters, has a unique soil composition of sandy clay mixed with flint. This special terroir, combined with the moist winds of western Georgia, creates the wine's characteristic bright acidity, energetic minerality, and fresh herbal edge.
"While many natural winemakers struggle with the wild Aladasturi variety, Mariam skillfully controls it! This 2023 vintage is full of pure, fresh energy, truly a perfectly vibrant red wine to enjoy slightly chilled on a warm evening.
