Tasting Notes

■ Appearance: A brilliant amber gold with a slight cloudiness, resulting from its pure, unfiltered production method.

■ Aroma: An inviting bouquet that bursts with dried apricot, baked apple, wild herbs, and characteristic white pepper.

■ Palate: Medium-bodied with a rich texture. The 48 days of skin contact provide a gentle, tea-like tannic structure that perfectly complements the refreshing acidity and deeply mineral-driven, umami-rich finish.

About the Wine's Characteristics

This wine is unfined and unfiltered to preserve its natural flavors, so harmless natural sediment or cloudiness may occur in the bottle. Please store it in a cool, dark place and enjoy with confidence.

The Story

A Blend of Austria's Signature Grapes and Minimal Intervention Natural Winemaking
This wine is a blend of "Grüner Veltliner," known for its freshness and distinctive peppery spice, and the ancient and rare "Roter Veltliner," which contributes full body, rich aromas, and excellent aging potential.

A testament to minimal intervention. Grapes are all hand-harvested in early October, carefully sorted, and destemmed. Fermentation takes place in temperature-controlled stainless steel tanks at 19°C, using only wild yeasts present in the environment. The juice remains in contact with the grape skins for a full 48 days to extract color, flavor, and texture. Malolactic fermentation then follows, and after resting on its lees until January, the wine is bottled completely unfined and unfiltered.

Food Pairing

Recommended perfect matches for this wine:

  • ■ Yakitori (salt or light sauce): The savory and smoky flavors of grilled chicken harmonize with the wine's wild herb aromas, while a hint of tannin refreshes the palate.
  • ■ Pork Milanese (Tonkatsu): The wine's refreshing acidity cuts through the richness of fried pork, and the texture derived from skin contact beautifully contrasts with the meat's umami.
  • ■ Aged hard cheeses (e.g., Comté) and fermented foods: The wine's earthy and umami-rich character resonates wonderfully with the distinct umami of aged dairy products and fermented foods.

Optimal serving temperature: 12°C to 14°C (Enjoy at this temperature to bring out its full richness)

Vineyard & Terroir

Wagram Region, Grossriedenthal (Altitude: 310m〜320m)

The secret to this wine's depth lies in its "Alte Reben" (old vines), planted in 1956 and 1970. Situated at an altitude of 310-320 meters, these deeply rooted vines draw nourishment from the famous loess soil of the Wagram region. This unique wind-blown and deposited soil, combined with strictly controlled low yields (40 hl/ha), imparts intense concentration and a distinct mineral structure to the wine.

 Sommelier/Winemaker Avatar

"It's almost impossible to find such a unique, organic certified old-vine orange wine for under 3,000 yen. The 48 days of skin contact give it a beautifully firm texture that is incredibly food-friendly. This truly represents the pinnacle of 'naked' winemaking."
