■ Taste: Delicate, round, and full-bodied. Beautifully balanced with a solid structure, revealing characteristic jammy flavors of plum and blackberry, leading to a smooth finish.

The Story
Bovin: North Macedonia's First Private Winery
Established in 1998 in the legendary wine region of Tikvesh, Bovin is North Macedonia's first private winery. It revolutionized winemaking in the region by combining environmentally conscious viticulture with cutting-edge winemaking techniques. Today, it produces many of the most highly-rated and rare premium wines in the Balkans.
Food Pairing
Recommended pairings that are perfect for this wine:
- ■ Grilled Meats (Ćevapi or Ribeye Steak): The wine's firm structure and robust tannins beautifully complement the rich fat and smoky flavors of the meat.
- ■ Tomato-Based Salads (Shopska Salad): The jammy, dark fruit notes enhance the natural acidity of fresh, ripe tomatoes.
- ■ Aged Hard Cheeses (Pecorino or Pag Cheese): The umami and strong flavors of aged hard cheeses beautifully intertwine with the lingering finish of this full-bodied, fruit-rich wine.
Serving Temperature: 15℃〜17℃ (Enjoy at this temperature range to fully appreciate its inherent richness)
Vineyard & Terroir
Tikvesh Wine Region, North Macedonia
Located at the same latitude as Tuscany and Bordeaux, Tikvesh is the driest region in the Balkans. Its rich soil with deeply tilled layers provides stable moisture to the grapevines even in harsh conditions where summer temperatures frequently reach 40°C. Gentle northern winds bring natural benefits, fostering surprisingly healthy and concentrated high-quality grapes.
"A true taste of the Balkans in a glass. Its deep, jammy fruit and smooth structure make it incredibly approachable, consistently promising outstanding quality and character beyond its price. — Dejan, Owner of Wine Shop Piti"
