■ Appearance: A slightly cloudy, vibrant golden color, indicating an unfiltered wine with skin contact.

■ Taste: Medium-bodied with a beautiful texture. The refreshing acidity characteristic of high altitudes forms the backbone, harmonizing with complex, mineral-driven flavors of orchard fruits. The finish is long and rich with umami from sur lie aging.

The Story

Cyprus' flagship white grape and traditional winemaking
Xynisteri is Cyprus' iconic white grape variety. Historically valued for its resilience to warm climates, it expresses a completely different character when cultivated at high altitudes, producing wines with vibrant acidity, elegant floral aromas, and deep aging potential.

Harvesting is done entirely by hand from late September to early November, depending on the altitude and aspect of the plots. Fermentation takes place in stainless steel tanks using only natural wild yeasts. Two days of skin contact are performed to enhance texture and aromatic complexity, after which the wine rests on its lees for 8 months, with occasional bâtonnage. To preserve its natural character, it is bottled unfined and unfiltered.

Panagia Mountains, Paphos (Altitude: 800m〜1150m)

These vineyards, farmed organically with a low density of 1,500 vines per hectare, are home to traditional bush vines planted between the 1940s and 1950s. The unique two-layered soil, with limestone and schist topsoil over rich clay subsoil, guides the old roots deep underground in search of moisture, imparting intense minerality to the wine. Furthermore, the harsh environment at 1150m altitude creates extreme diurnal temperature variations, locking in the grapes' brilliant natural acidity.
