Debit (Ante Sladić) 2021
A vibrant, bone-dry indigenous white wine that captures the pure sea breeze of the Dalmatian coast and the intense limestone minerality.
Nestled in the village of Plastovo, near the breathtaking Krka National Park, the Ante Sladić Family Winery is deeply passionate about preserving Croatia's indigenous grape varieties. Their high-altitude vineyards benefit from a unique microclimate where the warmth of the Mediterranean meets cool winds from the river, yielding wines of exceptional freshness and terroir-driven character.
Tasting Notes
■ Appearance: Beautifully clear pale golden color with bright, shimmering reflections.
■ Aroma: An enticing and fresh aroma bursting with zesty citrus, green apple, delicate chamomile blossoms, and a distinct hint of Mediterranean sea salt.
■ Palate: Extremely fresh, light, and bone-dry. On the palate, a vibrant wave of lemon and bitter almond washes over, framed by a deeply satisfying limestone minerality, leading to a clean and lingering finish.
With an alcohol content of 12%, serving this wine well-chilled at 10-12℃ will best highlight the sharp acidity characteristic of the Debit grape and its saline minerality. This is a refreshing glass, perfect for warmer weather and pairing with seafood.
The Story
Debit: A Historical Treasure of Northern Dalmatia
Debit is an indigenous variety carefully preserved in Northern Dalmatia. Historically valued for its high quality, this grape beautifully merges the bright, refreshing crispness brought by the northern winds with the robust character of the sun-drenched southern Mediterranean.
The grapes are meticulously hand-harvested from family-owned vineyards. To best showcase the freshness and bright aromatics characteristic of the Debit grape, the wine undergoes classic fermentation and aging exclusively in temperature-controlled stainless steel tanks, finished unfined and unfiltered to retain its most natural essence.
Food Pairing
Its intense saline minerality and bright acidity make it a perfect match for light, delicate seafood and fresh summer dishes:
- ■ Fresh Oysters and Shellfish: The bone-dry structure and prominent sea salt notes act as a natural squeeze of fresh lemon for briny seafood.
- ■ Seafood Tempura: The crisp, clean acidity perfectly cuts through the oiliness of light batter, with citrus notes refreshing the palate with each bite.
- ■ Fresh Summer Salads: The delicate floral notes of chamomile harmonize beautifully with fresh greens, and its refreshing profile balances light vinaigrettes or goat cheese.
Serving Temperature: 10℃〜12℃ (Enjoy its full richness within this temperature range)
Vineyard & Terroir
Plastovo, near Skradin, Northern Dalmatia (Elevation 250m)
The vineyards are situated at an altitude of 250 meters above sea level, thriving on rocky limestone soils. The rich Dalmatian sun and the unique microclimate shaped by the cool, fresh evening air from the nearby Krka River and Adriatic Sea impart the wine's characteristic sharp acidity and intense saline minerality.
“This wine has a very deep connection with Croatian history; in fact, the 'Debit' grape was once used as local currency! Having started working in the vineyards of Slavonia myself at a young age, I have a deep respect for honest, terroir-driven winemaking. Ante Sladić has masterfully bottled the fresh, salty winds of the Adriatic coast.
