Recommended Serving Suggestion

To best enjoy its delicate, elegant floral aroma and mountain acidity, it's recommended to serve slightly chilled at 10℃ to 12℃.

The Story

Rare Variety "Tsolikouri Tetra" and Traditional Qvevri
Meaning "white" in Georgian, Tsolikouri Tetra is an extremely rare indigenous grape variety native to the cool, high-altitude Racha region of Western Georgia. It is a treasure of Georgian viticulture, historically highly regarded for producing highly aromatic and elegantly floral wines.

Grapes are organically grown in steep mountain vineyards and harvested by hand. Fermentation occurs naturally in traditional underground clay vessels, Qvevri, using wild indigenous yeasts. After a gentle maceration with skin contact, sulfur dioxide addition is kept to zero or to a minimum to preserve its vibrant, "living" character, and it is bottled completely unfiltered.

Food Pairing

Recommended perfect matches for this wine:

  • Creamy garlic pasta or risotto – The wine's vibrant mountain acidity cuts through the richness of the cream, and its honey notes complement the sweet roasted garlic.
  • Herb-roasted white fish or halibut – The wine's delicate, floral profile harmonizes beautifully with fresh white fish, acting like a squeeze of lemon and a pinch of salt.
  • Soft cheeses with honey (such as Brie or Camembert) – The wine's natural linden blossom and honeycomb aromas perfectly resonate with a cheese board topped with fresh local honey.

Serving temperature: 10℃ to 12℃ (Enjoy at this temperature to unlock its full richness)

Vineyard & Terroir

Racha Region, Western Georgia

Often called "the Switzerland of Georgia," the Racha region is characterized by its high altitude, cool mountain breezes, and unique limestone-rich soil. This cool, alpine-influenced climate is the secret to preserving the crisp acidity and delicate floral aromas of the Tetra variety, preventing over-ripening while creating an amazing mineral tension.

 Sommelier/Winemaker Avatar

"Tsolikouri Tetra is an absolute hidden gem from the mountains of Racha, and Didgori captures its spirit perfectly. Unlike the heavy, tannic amber wines of the east, this wine has a delicate, floral elegance with a beautiful honeyed finish that dances on the palate. It's a wonderful introduction to the world of traditional Georgian winemaking and a truly delightful glass to pour!
