Smederevka is an ancient indigenous Balkan variety historically known for its vibrant, sharp acidity and high yield. By rigorously limiting yields and utilizing old vines, the true potential of this grape - deep flavor and structural complexity - is unleashed.
The Story
Bovin Winery
Established in 1998 in the famous Tikvesh wine region, Bovin was the first private winery in North Macedonia and continues to be a beacon of top quality in the Balkans. Sourcing grapes from the prestigious high-altitude micro-location of Dissan, their artisanal, low-intervention approach showcases the raw, hidden potential of Macedonia's indigenous varieties.
Grapes are hand-picked from selected old vines. All juice is fermented and aged in premium oak barriques, a process that softens the grape's intense natural acidity, creating a rich, creamy mouthfeel while retaining a vibrant core. Their uncompromising "nature-first" approach and dedication to hand-picking have earned them countless international medals and put the Tikvesh region on the global wine map.

While the intense Balkan sun ensures the grapes develop rich, full-bodied flavors, the cool mountain nights lock in the beautiful acidity essential for balancing the oak aging.
