To preserve the pure quality of the grapes, all are hand-harvested into small 20kg wooden crates. To maintain the original expression of the grapes, fermentation is traditionally carried out in concrete tanks, followed by careful aging in oak barrels to round out the tannins and add deep, complex layers to the final wine.
