Blessed with the rich natural environment of Western Georgia, Didgori Winemaking has a strong passion for low-intervention natural viticulture. By strictly adhering to traditional Kvevri methods and focusing on rare indigenous varieties, they create honest, 'living wines' that reveal the pure and unadulterated heartbeat of the terroir.
Tasting Notes
■ Appearance: A luminous, translucent ruby red with a delicate, natural haze.
■ Aroma: Fresh and highly aromatic, with bursting notes of wild strawberry, red cherry, and cranberry, complemented by subtle nuances of white pepper and earth.
■ Palate: Extremely lively and juicy. The palate is characterized by vibrant acidity, very soft tannins, and a clean, mineral-driven finish brimming with red forest fruits.
To enjoy this as the ultimate "glou-glou" natural wine, we highly recommend serving it slightly chilled at 12℃ to 14℃.
The Story
Georgia's Oldest Grape Variety "Tsolikouri" and Traditional Kvevri
Tsolikouri is widely considered one of Georgia's oldest grape varieties, dating back centuries. Traditionally cultivated in the Racha and Imereti regions, it is renowned for producing very elegant and light red wines with vibrant acidity and delicate fruit flavors.
The grapes are organically grown and hand-harvested. Fermentation occurs naturally in traditional clay vessels called "Kvevri" buried underground, using only wild, indigenous yeasts. Human intervention is minimized throughout the winemaking process, with zero or minimal addition of sulfites, and bottled completely unfiltered.
