The Story

Zelshavi: Georgia's Oldest Grape Variety and Traditional Qvevri

Zelshavi is widely considered one of Georgia's oldest grape varieties, dating back centuries. Traditionally cultivated in the Racha and Imereti regions, it is renowned for producing exceptionally elegant and light red wines with vibrant acidity and delicate fruit flavors.

The grapes are organically grown and hand-harvested. Fermentation occurs naturally in traditional underground clay vessels called Qvevri, using only wild, indigenous yeasts. Human intervention is minimized throughout the winemaking process, with zero or minimal addition of sulfites, and the wine is bottled completely unfiltered.

Food Pairing

Recommended perfect matches for this wine:

  • Charcuterie and Duck Pâté – The wine's vibrant acidity cuts through the richness of cured meats and fatty pâté, refreshing the palate.
  • Grilled Salmon or Tuna – Its extreme lightness and freshness allow it to act like a robust rosé, harmonizing perfectly with fatty grilled seafood without overpowering its delicate flavors.
  • Tomato-based Pasta or Margherita Pizza – The wine's bright, refreshing red fruit notes beautifully complement the natural acidity of rich tomato sauces.

Serving Temperature: 12℃〜14℃ (Slightly Chilled) (Enjoy its true richness at this temperature range.)

Georgian Red Wine Natural
Vineyard & Terroir

Western Georgia (Imereti / Racha)

The humid and temperate climate of Western Georgia, along with its unique clay and limestone-rich soils, provides the perfect environment for Zelshavi. This cool, moist terroir helps the grape maintain its characteristic sharp acidity and prevents delicate red fruit flavors from over-ripening.

 Sommelier/Winemaker Avatar

"If you love light, energetic red wines like good Cru Beaujolais or Trousseau, this Zelshavi will be your new obsession! It's a fresh, invigorating, ultimate 'glou-glou' natural wine packed with notes of wild strawberry. I strongly recommend serving it slightly chilled. Dangerously drinkable and absolutely perfect for any occasion.
