By fermenting organically grown grapes in subterranean clay amphorae (qvevri) coated with beeswax, they produce pure, unadulterated wines that beautifully express the true, historical voice of the terroir.

The harvested grapes are spontaneously fermented with wild yeasts, along with their skins and stems (chacha). By aging in traditional clay vessels called "qvevri," buried deep underground, a slow and stable fermentation is achieved without any modern intervention.
