Tasting Notes
■ Appearance: Bright, inviting deep pink with brilliant ruby reflections.
■ Aroma: Enticing aromas of wild strawberries, ripe raspberries, and a hint of pomegranate, with earthy and mineral undertones adding depth.
■ Palate: Medium-bodied and gently semi-dry, it fills the mouth with red berry fruit flavors, perfectly balanced by Xinomavro's characteristic refreshing acidity, leading to a crisp, invigorating finish.
This exquisite wine comes from an estate specializing in Xinomavro, respected by critics worldwide. To preserve the pure fruit and vibrant freshness, it is aged exclusively in stainless steel tanks, without the use of oak barrels.
The Story
A Modern Approach to the Noble "Acid and Black" Grape
"Xinomavro" (pronounced Ksee-NOH-mav-ro) means "acid and black" in Greek and is the country's most highly regarded red wine grape variety. While famous for bold, long-aging red wines, when vinified with precision and care, it yields incredibly complex and fruity rosés with a stunning acidic backbone.
Harvested by hand in late September, the grapes undergo fermentation in stainless steel tanks using only wild yeasts, followed by natural malolactic fermentation. To preserve the wine's pure fruit character and vibrant freshness, it is aged in stainless steel tanks for six months.
Food Pairing
The semi-dry character and refreshing acidity of this rosé make it surprisingly versatile, pairing well with a wide range of dishes, from spicy to savory and subtly sweet:
- ■ Spicy Thai Green Curry: The subtle sweetness of the semi-dry rosé mellows the chili heat, while its acidity cuts through the richness of coconut milk.
- ■ Sweet and Sour Pork: The wine perfectly complements the dish's sweet and sour sauce, enhancing each other's rich flavors without clashing.
- ■ Prosciutto and Melon: Its vibrant red fruit notes beautifully harmonize with the sweet melon and enhance the salty, savory character of the pork.
Serving Temperature: 11℃〜13℃ (Enjoy at this temperature range to fully appreciate its richness)
Vineyard & Terroir
Silex (Flint) and Clay Soil Providing Minerality
In Polla Nera, Naoussa, organically cultivated, east-facing vines (planted in 2014) at an altitude of 250 meters benefit from excellent sun exposure. The unique clay soil, rich in Silex (flint), imparts a distinctive mineral backbone to the wine, perfectly complementing its semi-dry profile.
"Xinomavro is typically known for intense, tannic red wines, but Marcos has created something truly special here. This semi-dry rosé is incredibly approachable, with a beautiful natural acidity and a perfect balance of fruit sweetness. It's undoubtedly a standout in our selection of Eastern Mediterranean wines!"
