Crafted by John "Joni" Okruashvili in Sighnaghi, a picturesque hilltop town in the Kakheti region, "Okro's Wine" is a beacon of authentic and uncompromising natural winemaking. By adhering to organically farmed, high-altitude vineyards and the ancient Qvevri tradition, Joni produces "living wines" imbued with extraordinary vitality, freshness, and untamed energy.
Tasting Notes
■ Appearance: A brilliant deep ruby-purple with vibrant, naturally unfiltered edges.
■ Aroma: An explosive aroma of blackberry with a wild edge, crushed black cherry, and high-toned notes of violet, whispered with subtle earthy nuances of clay and spice.
■ Palate: Fresh, energetic, and perfectly structured. The lively, sharp acidity characteristic of its high-altitude origins harmonizes with chewy, rustic tannins, leading to a long, mineral-driven finish brimming with dark forest berries.
To beautifully harmonize the fresh acidity from its high-altitude origins and the tannic structure from Qvevri aging, we recommend serving at 16℃ to 18℃.
The Story
Rare Budeshuri Clone and "Naked" Qvevri Winemaking
Saperavi Budeshuri is a rare and highly prized mutation of Georgia's renowned Saperavi grape. Known for its distinctive elongated berries and more intense floral aromatics, it produces a slightly more elegant and aromatic red wine than standard Saperavi, yet still with a solid structure.
The grapes are organically dry-farmed (without irrigation) and hand-harvested. Fermentation occurs naturally with wild yeasts in traditional clay Qvevri, buried deep in the earth. After destemming, the wine undergoes approximately 15 days of maceration with the skins, followed by more than a year of aging in Qvevri. Absolutely no sulfites are added, and the wine is bottled completely unfiltered.

With its lively acidity, dark fruit flavors, and rustic Qvevri tannins, this Saperavi Budeshuri shows remarkable affinity with rich meat dishes and slightly wilder cuisine.

Vineyard & Terroir
Sighnaghi, Kakheti Region (Manavi Vineyards)
Harvested from cool, high-altitude vineyards (approximately 500 meters above sea level) with a mix of alluvial soil and sandstone. This cool climate is the secret to the wine's vibrant acidity and freshness, preventing over-ripening of the grapes while allowing for the full development of complex aromas.
