The Story of Pheasant's Tears and Khikhvi
Pheasant's Tears is a pioneer in Georgia's natural wine movement, dedicated to reviving an 8,000-year-old winemaking tradition. Located in the heart of Kakheti, they ferment indigenous grape varieties in traditional subterranean clay vessels called "qvevri," producing wines with unparalleled raw character and soul.

Khikhvi is a rare, ancient indigenous grape variety from Georgia. It is known for its remarkable ability to develop complex aromas and high sugar content while maintaining a distinctively elegant acidity. Hand-harvested and fermented in traditional qvevri, without any additives or temperature control, it undergoes a prolonged natural skin maceration, followed by aging on its lees, which gives it its characteristic amber color and structured palate.
