Adhering strictly to organic viticulture and ancient winemaking methods, they ferment solely in beeswax-lined clay Qvevri buried underground, crafting "living wines" of unparalleled historical authenticity and depth.

About Rkatsiteli and Vinification:
Rkatsiteli (meaning "red stem") is one of the world's oldest and most revered grape varieties, dating back to 3000 BC. Following the strict traditions of Kakheti, grapes harvested by hand from organic vineyards undergo spontaneous fermentation with wild yeasts. The must, along with chacha (skins, seeds, and stems), ferments and ages for several months in underground Qvevri. Bottled unfined and unfiltered, the wine retains its powerful and natural vitality.

The robust tannins and deep umami of this amber wine pair perfectly with rich, flavorful dishes that would complement a medium-bodied red wine:
