The new, elegant face of Bulgarian wine. A pure, terroir-driven expression of the ancient Mavrud varietal.
Located in Nikolaevo village in the Thracian Valley, Rossidi is a boutique winery leading Bulgaria's modern wine renaissance. Rather than relying on over-extraction, they are passionate about low-intervention, terroir-focused winemaking to produce authentic wines that are distinctive, elegant, and express the "true voice" of the vineyard.
Tasting Notes
■ Appearance: Deep, brilliant garnet red.
■ Aroma: Alluringly complex aromas of ripe red cherries, forest berries, and tomato leaf, layered with spicy notes of black pepper, nutmeg, and a hint of smokiness.
■ Palate: Possessing a rare finesse for Mavrud, the palate is exceptionally elegant and smooth. Layers of dark fruit and cocoa unfold, balanced with lively acidity, silky tannins, and a beautifully mineral-driven, long finish.
Mavrud is one of Bulgaria's oldest and most cherished indigenous varietals, typically known for producing dark, heavily extracted wines. However, Rossidi hand-harvests old vines over 40 years old, employing natural fermentation with wild yeasts and aging for 12 months in small oak barrels (barriques). This process uncovers an astonishing elegance and aromatic complexity, without masking the naturally vibrant fruit character.
The Story
Bulgaria's top boutique winery enchanting the world
Rossidi is widely recognized as one of Bulgaria's top boutique producers. They frequently win "Best Indigenous Varietal Wine" at the DiVino Top 50, and receive high praise from international wine critics such as Jancis Robinson and Steven Spurrier. Their commitment to crafting world-class wines from Balkan indigenous varietals continues to captivate many wine enthusiasts.
Food Pairing
The combination of elegant fruit, fine-grained tannins, and peppery spice aromas makes this wine highly versatile with roasted and spiced dishes:
- ■ Char-grilled Ribeye Steak: The wine's structural acidity and fine tannins beautifully cut through the rich marbling of the beef.
- ■ Roast Duck with Cherry Sauce: The vibrant red cherry and berry nuances of Mavrud perfectly resonate with fruit sauces, while the herbaceous spice notes enhance the flavor of the meat.
- ■ Slow-cooked Wild Game Stew (Goulash): The wine's earthy character, black pepper, and nutmeg aromas harmonize wonderfully with the rich, deeply stewed flavors of meat and root vegetables.
Serving Temperature: 16°C〜18°C (Start at a slightly cooler temperature and enjoy the evolving aromas in the glass.)
Vineyard & Terroir
Thracian Valley, Sliven region (Nikolaevo village)
The vineyards are located in a unique microclimate where the Balkan Mountains meet the sun-drenched Thracian Lowlands. While the warm days ensure optimal ripening, cool breezes from the mountains maintain the "high natural acidity" and "mineral tension" essential for Rossidi's characteristic elegant style.
"Rossidi completely changed my perception of Mavrud. Instead of a heavy, overpowering red, it's incredibly refined, complex, and elegant. This is a true 'naked' expression of Bulgarian terroir that absolutely must be tasted."
