The Story
Redefining the boundaries between cider and wine
From innovative Swedish producer Brutes, this cuvée features crisp juice from traditional Swedish apples (Discovery, Aroma) and pears (Alexander Lucas), macerated with biodynamically farmed Pinot Noir and Blaufränkisch grape skins. Wild yeast fermentation is followed by a secondary fermentation in the bottle under crown cap, capturing its natural effervescence. A low-intervention masterpiece that celebrates the pure, unadulterated bounty of fruit.
Food Pairing
With its bright acidity, effervescence, and gentle tannic structure, this hybrid pét-nat proves remarkably versatile at the table. Recommended pairings:
- ■ Charcuterie & Prosciutto: The crisp acidity cuts through fatty richness, and the light red wine nuances perfectly complement savory, salty cured meats.
- ■ Yakitori (Salt or Sauce): The fresh orchard fruit and vibrant effervescence beautifully balance the smoky, juicy flavors of grilled chicken, refreshing the palate with every bite.
- ■ White Mold Cheese (Brie or Camembert): The refreshing apple and pear elements recreate the classic fruit and cheese pairing, effortlessly accompanying creamy, rich textures.
Optimal serving temperature: 8°C ~ 10°C (Enjoy at this temperature range to fully appreciate its richness.)
Vineyard & Terroir
The crisp acidity and concentrated fruitiness of apples and pears thrive in Sweden's cool climate. Combined with the character of biodynamically farmed grapes, this bottle expresses a "cross-border terroir" – a masterful fusion of refreshing Swedish orchards and the vitality of natural viticulture.
"This is what makes natural winemaking so exciting. The grape skins take center stage, providing a light red wine structure to a wonderfully refreshing cider base. It's delicious now, but has the potential to evolve beautifully if you have the patience to age it in your cellar."
