The Story
An Ancient Indigenous Variety Called "Fox's Tail"
Telti-Kuruk is an ancient indigenous grape variety from Ukraine, named "Fox's Tail" due to the elongated shape of its clusters. Today, it is a very rare variety cultivated by only a handful of wineries, including Shabo and Baikush, and is highly regarded for its elegant aroma and crisp taste.
Carefully cultivated in the Odesa region, it is vinified to preserve its delicate aromas. The "Master Tardan" series highlights the inherent roundness and pure transparency of this grape, resulting in a surprisingly refreshing profile despite its solid structure.
Food Pairing
The elegant transparency and crisp acidity of this wine make it very versatile for food pairing, harmonizing beautifully with traditional Japanese cuisine.
- ■ Fugu Sashimi / Fried Fugu – The wine's pure transparency and crisp acidity perfectly complement the delicate, refined sweetness of fugu without overpowering it.
- ■ White Fish Meuniere / Seafood Carpaccio – The rounded, white peach-like aroma and lively acidity cut through the rich butteriness of meuniere and enhance the umami of fresh carpaccio.
- ■ Shrimp Gratin – The wine's solid structure and rounded body stand up well to creamy, rich sauces, while a refreshing finish gently cleanses the palate.
Serving Temperature: 8℃〜12℃ (Enjoy at this temperature range to bring out its full richness)
Vineyard & Terroir
Odesa
The vineyards of the Odesa region benefit from a favorable coastal climate that keeps temperatures mild, helping the rare Telti-Kuruk ripen slowly and evenly. This environment perfectly draws out the grape's characteristic crisp acidity while developing rounded, fruity aromas.
Shabo is a historic and highly-regarded winery in Ukraine. Dedicated to preserving and enhancing indigenous varieties like Telti-Kuruk, it showcases the true potential and elegance of Odesa's winemaking heritage to the world.
"From my younger days spent tending vines in the Slavonian fields, I have a deep affection for rare indigenous varieties that truly express their terroir. This Telti-Kuruk is a truly amazing discovery. Its refined transparency and notes of white peach harmonize beautifully with delicate Japanese cuisine.
