The Story

Pheasant's Tears: Upholding Tradition
Founded by John Wurdeman and Gela Patalishvili, Pheasant's Tears is dedicated to preserving Georgia's ancient winemaking heritage. By using organically grown grapes and fermenting exclusively in traditional beeswax-lined clay amphorae (qvevri) buried underground, they produce uncompromising wines celebrated in top restaurants and natural wine bars worldwide.

About the Tsolikouri Grape and Vinification:
Tsolikouri is a beloved white grape variety native to Western Georgia, historically prized for its vibrant acidity, lively character, and flavors of fresh green apple. The grapes are hand-harvested and undergo spontaneous fermentation with wild yeasts only. This wine sees minimal skin contact, with both fermentation and aging taking place entirely in buried qvevri. Unfined and unfiltered, with minimal SO2 added, it captures vibrant energy directly in the bottle.
