Tasting Notes

■ Appearance: Striking deep ruby pink. It has such rich pigmentation that at first glance, it could be mistaken for a light red wine.

■ Aroma: Lively and wild aromas of fresh wild cherry and crushed raspberry, blended with a subtle earthy spice.

■ Palate: Bursting with vibrant fruitiness and surprising purity. The taste of freshly picked red berries explodes in the mouth, accompanied by a pleasant acidity and a powerful, rustic edge characteristic of a wine with minimal artificial intervention.

As a completely natural, unfiltered wine, sediment and cloudiness may be present, which are harmless. Uncork this Dutch masterpiece and experience the vibrant energy of the vineyard.

Story

Pioneering Natural Vineyard
Wijngaard Dassemus, located in the idyllic village of Chaam in North Brabant, is a pioneering natural winery run by Ron Langeveld and Monique van der Goes. They use innovative disease-resistant varieties (PIWI) such as "Cabernet Jura" and "Cabernet Cantor," which are perfectly adapted to the cool Dutch climate and allow for 100% organic cultivation. As its name suggests, to bring out its "wild" charm, optimally ripened grapes are hand-picked and fermented naturally using only wild yeasts from the vineyard. The wine is bottled unfiltered and unfined, with only a very small amount of sulfites added at bottling (less than 10mg/l) to preserve its lively character.

Recommended Pairings

Recommended pairings to enhance this wine's appeal:

  • Charcuterie & Prosciutto: The wine's vibrant acidity and red fruit flavors beautifully cut through the rich fattiness of prosciutto, salami, and rustic pâtés.
  • Grilled Salmon or Tuna: Its firm structure and bright berry notes harmonize wonderfully with the rich flavor and savory char of oily fish.
  • Spicy Asian Cuisine: The juicy, fruit-forward profile gently mellows the heat of Thai green curry or spicy Sichuan dishes, creating a delightful contrast.

Serving Temperature: 10℃〜12℃ (Enjoy at this temperature to bring out its full richness)

Vineyard and Terroir

Chaam, North Brabant: The Dassemus vineyards are cultivated in perfect harmony with the surrounding natural environment. No chemical fertilizers are used; instead, specially sown herbs, clover, and wild grasses are mixed to enrich the sandy soil. This rich biodiversity, combined with the influence of the cool, maritime Dutch climate, results in exceptionally healthy grapes with a natural balance and a core of clean acidity.

Sommelier/Producer Avatar

"This is a finish that clearly stands apart from typical pale and elegant rosés. It expresses the vibrant terroir of the Netherlands, unfiltered, and features such a deep color that it can be enjoyed like a chilled red wine. For those seeking wild and natural energy, this is definitely a bottle to savor!"
